Chocolate Rice Crispy Cakes Variations

Chocolate rice crispy cakes are easy to make and endlessly versatile. Once you’ve got the base recipe down, try adding a few tasty tweaks! Instead of using a Smarties® to top each ball, chop them up instead and fold the colourful pieces into the mixture to get extra pops of colour and crunch! For a squishy topping, add a mini marshmallow crown. For a fruity flavour, top each cake with a pinch of freeze-dried raspberries or strawberries. Storage Instructions 

Store your chocolate rice crispy cakes in an airtight container at room temperature for up to five days. You can also store them in the fridge, but they will have a harder texture. Enjoy them cold out the fridge or pop a few on a plate and let them come to room temperature. For a freezer treat, stick the cakes into an airtight container and freeze for up to three months.   • 100g dark chocolate, chopped
  • 100g milk chocolate, chopped
  • 50g buttery baking spread
  • 160g mini marshmallows
  • 100g puffed rice cereal – we used Nestlé Go Free® Rice Pop
  • 2 x 38g Smarties® Tubes

Method

For the cupcakes

  1. Pop the dark and milk chocolate into a microwave-safe bowl. Heat in 30-second bursts, stirring in between, until the chocolate is melted and smooth. If the kids are helping with this, make sure they wear oven gloves as the bowl heats up.
  2. Add marshmallows and continue heating in bursts and stirring until they have melted and mixed into the chocolate.  
  3. Add the puffed rice to the mixture and stir with a wooden spoon or spatula to combine and coat evenly.  
  4. Once the mixture is cool enough to handle, spoon out a small amount of the mixture and roll it into a ball. Aim for 25 balls at 25g each.  
  5. Gently press a Smarties® into the top of the balls to stick. Place each ball into a cupcake case and place them onto a tray.
  6. Place the tray into the fridge to chill for 15 minutes. 

     
     

Top Tips

The microwave is the quickest and easiest way to melt your chocolate and marshmallows, but you can also use the stove-top method. Simply set a heatproof glass bowl over a pot with a small amount of water. Make sure the water doesn't touch the bowl! Set the pot over low heat then add the chocolate. Bring the water to a gentle simmer to melt the chocolate. Stir occasionally until smooth. Be careful not to get any water in the chocolate or it will seize and become grainy.  
 

FAQs
Can I use white chocolate instead of milk chocolate?

For sure! Get smooth and creamy with Milkybar® and replace the milk chocolate. For a full white chocolate ball, replace both the milk and dark chocolate with Milkybar®. 

How long do chocolate rice crispy cakes take to set?

A brief rest in the fridge for 15 minutes will set the chocolate rice crispy cakes.  
 

Do they need to be refrigerated?

Chocolate rice crispy cakes do not need to be stored in the fridge but for longer storage, you can pop them into the fridge.
