You'll need:

  • 2 Bananas
  • 1 Egg, Large
  • 100g Light Brown Soft Sugar
  • 55g Light Buttery Spread, Melted
  • 65ml Skimmed Milk
  • 200g Plain Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Bicarbonate of Soda
  • 30g Cocoa Powder + 1 Tsp for Icing
  • 3 1/2 Tbsp Icing Sugar
  • 1/2 Tbsp Water
  • 36 Smarties (3 per muffin)

Method

  1. Pre-heat your oven to 160C fan and line a cupcake tin with 12 paper cases.
  2. In a mixing bowl, stir together the plan flour, light brown soft sugar, cocoa powder, baking powder and bicarbonate of soda.
  3. In a second bowl, mash the bananas, then stir in the melted light buttery spread.
  4. Add the egg and milk to the bananas and mix them in.
  5. Pour the banana mixture into the flour mixture and whisk to combine into the muffin batter.
  6. Divide the batter between the paper cases.
  7. Bake for 20-25 minutes, or until risen and a thin skewer or a cocktail stick inserted into the centre of the muffins comes out clean. Place them on a rack to cool fully.
  8. Make the glaze by mixing the icing sugar, cocoa powder and water together into a smooth paste.
  9. Decorate each muffin with the glaze, then stick 3 SMARTIES onto each muffin..
