

You'll need:
- 2 Bananas
- 1 Egg, Large
- 100g Light Brown Soft Sugar
- 55g Light Buttery Spread, Melted
- 65ml Skimmed Milk
- 200g Plain Flour
- 1 Tsp Baking Powder
- 1 Tsp Bicarbonate of Soda
- 30g Cocoa Powder + 1 Tsp for Icing
- 3 1/2 Tbsp Icing Sugar
- 1/2 Tbsp Water
- 36 Smarties (3 per muffin)

Method
- Pre-heat your oven to 160C fan and line a cupcake tin with 12 paper cases.
- In a mixing bowl, stir together the plan flour, light brown soft sugar, cocoa powder, baking powder and bicarbonate of soda.
- In a second bowl, mash the bananas, then stir in the melted light buttery spread.
- Add the egg and milk to the bananas and mix them in.
- Pour the banana mixture into the flour mixture and whisk to combine into the muffin batter.
- Divide the batter between the paper cases.
- Bake for 20-25 minutes, or until risen and a thin skewer or a cocktail stick inserted into the centre of the muffins comes out clean. Place them on a rack to cool fully.
- Make the glaze by mixing the icing sugar, cocoa powder and water together into a smooth paste.
- Decorate each muffin with the glaze, then stick 3 SMARTIES onto each muffin..
