What are Scotch pancakes? 

Scotch pancakes, also known as drop scones, are the thick, fluffy darlings of the pancake world. Unlike their thinner crêpe cousins, these golden beauties puff up into soft, cakey rounds that are ideal with butter, jam, a drizzle of honey or as a tasty chocolate treat They’re quick to make no matter your skill level and great for a special-occasion breakfast!

Storage instructions 

Pop your Scotch pancakes in an airtight container and store them in the fridge for up to three days. To reheat, arrange them on a plate and heat them in the microwave for 20-30 second bursts until warm. You can also freeze the pancakes for up to three months. To defrost, simply leave the container in the fridge overnight then reheat and serve.

  • A whisk
  • A tablespoon (or two) for spooning the mixture
  • Two mixing bowls (one large)

  • 200g self-raising flour
  • 50g caster sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • A pinch of salt
  • 150ml semi-skimmed milk
  • 2 medium eggs
  • 1 tsp vanilla extract
  • Butter, unsalted, to grease the pan

Method

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and a pinch of salt.
  2. In another bowl, whisk the milk, eggs and vanilla.  
  3. Pour the wet ingredients into the dry and whisk until mostly smooth. A few lumps are okay!  
  4. Heat a non-stick frying pan over medium heat, then grease it with a little butter. Drop heaped tablespoon amounts into the pan, around 2-3 at a time, depending on the size of your frying pan. Use the back of the spoon to shape them into circles. If you’re feeling cheffy, use two pans at the same time to speed up the process!
  5. Leave to cook until bubbles start to form and pop on the surface, then flip. Continue cooking for another 45-60 seconds until golden. Stack the Scotch pancakes on a plate to keep them warm and repeat the process until you’ve used all the mixture.  
  6. Top with your preferred toppings and serve!  

     

Top Tips

When it comes to great Scotch pancakes, slow and steady wins the race. They are thicker so they need time to cook through without burning the outside. An even medium heat ensures golden exterior, puffy centre and tender texture. If your butter hits the pan and turns brown after few seconds, turn down your heat!
