Get your mint chocolate fridge slice on with our super easy mint Aero® Rocky Road recipe. It’s big on flavour, low on effort and you’ve probably already got most of the ingredients in your kitchen cupboards. It’s easy to portion up, so if you’re planning some outdoor adventures, it’s a great treat to wrap up and share out when you get to the top of that hill.

Besides crunchy biscuits, chocolatey bubbles and hunks of chocolate mint creaminess, our mint Aero® Rocky Road is simply fun! It’s a riot of colour, and packed with different textures and flavours to make each bite a little different from the last. The great thing about baking with Aero® Peppermint is the pops of colour you often get throughout the recipes – as seen in our Mint Aero® Traybake, Mint Aero® Cake and Mint Aero® Brownies.  

Rocky Road variations

It’s easy to customise your version of Rocky Road. If you don’t have digestive biscuits in the cupboard, Rich Tea biscuits work well – or something chewier, like oat biscuits. Check out our variations below. Once you’ve got the biscuit base recipe down, try experimenting with all sorts of Aero® flavours. Feeling for citrus or nutty flavours instead of mint? Use Aero® Choco-Hazelnut or Aero® Orange instead of Aero® Peppermint.   

Storage and serving instructions 

Pop your mint Aero® Rocky Road into an airtight container and store it in the fridge for up to five days. Enjoy it cold from the fridge or leave a slice out at room temperature for an hour to take some of the chill off . Either way, your Rocky Road will hit that sweet flavour spot every time. You will need

  • 900g loaf tin
  • Baking paper
  • Plastic wrap to cover

Ingredients

  • 125g buttery baking spread
  • 100g Carnation Condensed Milk or Carnation Original Drizzle
  • 1 tbsp golden syrup
  • 6 tbsp cocoa powder
  • 225g digestive biscuits, broken into large pieces
  • 1 x 92g Aero® Peppermint Bubbles Sharing Pouch
  • 2 x 90g Aero® Peppermint Sharing Bar, chopped or broken up into pieces
  • 2 tsp star sprinkles

Method

  1. Line the loaf tin with baking paper and be sure to leave an overhang of paper to ensure easy removal later.
  2. Set a large pan over medium-low heat. Melt the buttery baking spread, add the condensed milk, golden syrup and cocoa powder, and stir until combined.
  3. Place your broken biscuits, Aero® Peppermint Sharing Bar and half the Aero Peppermint Bubbles into a large bowl and pour over the melted butter mix – use a spatula to get every last drop out. Mix everything together until the biscuits are evenly coated. We’ve used digestive biscuits in our recipe, but you can use any other biscuits you may have in the cupboard.
  4. Spoon the mix into your prepared loaf tin, then press the remaining half of the Aero® Peppermint Bubbles into the top, followed by the star sprinkles.
  5. Cover with plastic wrap and place in the fridge for a couple of hours until fully set.
  6. Once firm, use the overhang of parchment paper to gently remove it from the tin. Slice into 15 pieces and share! 
     

For the cleanest cuts and sharpest lines, dip a large knife in hot water, then slice and dice. For an afternoon tea, long strips look attractive when arranged on a cake stand or pretty plate. If you’re bringing your Rocky Road to a party, small squares go furthest.
