How to Make Mint Aero® Brownies 

Cool and bubbly Aero® Peppermint and decadent dark chocolate come together to make this showstopper of a brownie! If you can, take your eggs out of the fridge an hour before you make the recipe. Using room-temperature eggs will help your mixture emulsify evenly. 

Peppermint Aero® Chocolate Brownie Variations 

Add 200g crushed shortbread to the mixture to give a rich, creamy crunch. Or for even more minty power, add ¼ tsp mint essence to the mixture.  

If you want to get super fancy, you could make a decadent Aero® Peppermint ganache drizzle. Simply pop equal parts (50g) Aero® Peppermint and 50ml whipping cream into a heat-proof bowl and heat for one minute in the microwave. Stir and heat for another 30 seconds until the chocolate is just melting. Stir again to combine.  

Serving suggestions

If the weather’s hot, make a fresh mint tea by placing 4-5 sprigs of washed garden mint into a mug with a half-teaspoon of sugar and topping up with freshly boiled water.

You will need

  • 20cm square brownie tin
  • Baking paper
  • Electric mixer (optional)

Ingredients

  • 180g buttery baking spread
  • 250g light soft brown sugar
  • 3 large eggs, ideally at room temperature
  • 60g cocoa powder
  • 2 tsp vanilla extract
  • 120g plain flour
  • 1 tsp baking powder
  • 100g dark chocolate, chopped
  • 2x 90g Aero® Peppermint Sharing Bar, chopped and kept separate

Method

  1. Preheat your oven to 180°C/160°C fan/gas 4. Line a 20cm square tin with baking paper, letting the edges overhang to make the brownies easy to remove.
  2. Add the buttery baking spread to a heatproof bowl and melt in the microwave, first for 30 seconds and then in 15-second bursts, stirring between each burst. Stir until smooth, then add the sugar and mix to combine. Heat for another minute in 30 second bursts, stirring between each burst. When the mixture is heated through, remove it from the microwave, whisk to combine and set aside to cool a little. Melting the butter and sugar together ensures a fudgy brownie with a shiny top.
  3. Meanwhile, in a separate bowl, whisk the eggs, cocoa powder and vanilla until combined. Slowly add the warm buttery sugar mixture and whisk until glossy.  
  4. Sift in the flour and baking powder then add the chopped dark chocolate and one of the chopped Aero® Peppermint Sharing Bars. Fold with a silicone spatula until no dry flour remains, being careful not to overmix.
  5. Pour the mix into the tin and spread evenly using either a palette knife or the back of the spoon. Bake for 25–30 minutes. A cocktail stick inserted in the centre should come out clean, or with a few moist crumbs, rather than being gooey.
  6. Let the brownies cool in the tin before slicing them into squares.
  7. To finish, add half of the remaining Aero® Peppermint Sharing Bar to a small microwave-safe bowl and melt in short bursts. Use a teaspoon to drizzle the chocolate onto the brownies, then immediately top with the remaining Aero® Peppermint Sharing Bar.  

Top Tips

Let the brownies cool completely before slicing. This gives them a chance to set. For maximum fudge factor, store the whole tray in the fridge for a few hours. Use a big chef’s knife to cut the brownies and clean the knife after each cut for Instagram-perfect slices.

Can I make this recipe gluten-free?

Brownies are very forgiving so if you want to make this recipe gluten-free, simply replace the plain flour with gluten-free flour.  

How do I know when the brownies are done baking?

Brownies typically take 25-30 minutes to bake but it is still best to check with a cocktail stick or cake tester. A cocktail stick inserted in the centre of the brownie should come out with a few moist crumbs rather than gooey.  

Can I reduce the sugar without affecting the texture?

Brownies rely on sugar for their fudgy texture but if needed, you can reduce the sugar by 50g.  

How do I store brownies?

Store your brownies in an airtight container. If you like your brownies more cakey, store them at room temperature. If you’d like them more fudgy, store them in the fridge. 

How long do brownies last?

In an airtight container, your brownies will last for up to five days.  

Can you freeze brownies?

Sure thing! Brownies freeze incredibly well. Simply pop them into an airtight container and freeze them for up to 3 months. To serve, defrost at room temperature. You can also warm the brownies in the microwave and serve with a blob of ice cream. Yum!
