Mint Chocolate Truffles Variations and Add-Ins 

Our mint chocolate truffles are quick, easy and versatile when it comes to playing with flavours and textures. We’ve gone for a classic cocoa powder coating, but for a white chocolate drizzle, simply melt 50g Milkybar® and drizzle it over the truffles. For a nutty coating, roll the truffles in finely chopped nuts to coat. To hide a nut in the centre, roll the truffle around a macadamia nut or for an island twist, roll them in desiccated coconut. To boost the peppermint flavour, add half a teaspoon of natural peppermint extract to the melted mixture.

Storage Instructions 

Truffles are made of rolled chocolate ganache and our recipe contains fresh cream, so store them in an airtight container in the fridge for up to three days, or in the freezer for up to one month. Be careful not to stack them on top of each other so they don't stick together! To defrost, simply leave it in the fridge overnight.

You will need

  • A heat-proof bowl
  • A container with a lid
  • Plastic wrap

Ingredients

  • 180g Aero® Peppermint, chopped
  • 80ml whipping cream
  • 15g buttery baking spread
  • 2 tbsp cocoa powder (for rolling)
Each truffle (1/20) typically contains:
  • Energy 290kJ 70Kcal 3%
  • Fat 4.9g 7%
  • Saturates 2.8g 14%
  • Sugars 5.4g 6%
  • Salt 0.03g 1%

Method

  1. Place chopped Aero® Peppermint pieces in a heatproof bowl.
  2. In a small saucepan, heat the cream and butter until steaming but not boiling – if your cream is too hot, the chocolate could split.
  3. Pour the warm cream mixture over the Aero® and leave it to stand for 2-3 minutes.
  4. Stir gently until smooth and glossy.
  5. Cover the bowl and pop it into the fridge for at least 3 hours to set.  
  6. Once the ganache is hard and set, use a teaspoon to scoop 20 equal portions and roll them into balls.
  7. Roll the balls in the cocoa powder to coat.  
     

Top Tips

If your ganache is feeling a little sticky after portioning it out, pop the tray into the fridge for 20 minutes. This will dry the surface of the ganache out, making it easier to coat. Another great tip is to chill the tray you intend to work on before you start!
