After Eight Flavours 

After Eight® is the original thin mint chocolate that adds a touch of class to any occasion. With cool, silky peppermint fondant made from natural peppermint oil – wrapped in rich, rippled dark chocolate – it’s a classic mix of fresh and luxurious. First created in 1962 by Rowntree’s® chocolatier Brian Sollitt, After Eight® has been the go-to after-dinner treat for sophisticated gatherings ever since.  Serving Suggestions 

Wow your guests with a hot or cold dessert pairing treat. For a hot idea, pair your After Eight® ice cream with an espresso dusted with cocoa for an intense flavour experience. For something a little lighter, serve it with a pot of freshly brewed mint tea. To add some texture and flair to the experience, crush up a waffle cone and sprinkle it over the ice cream, then finish with a few fresh mint leaves. 

How to Store After Eight® Ice Cream 

Keep your ice cream in an airtight container in the freezer for up to three months.

Do I Need an Ice Cream Maker? 

No! That’s the magic of no-churn ice cream. Just whip, mix, fold and set. It couldn’t be easier.

You will need

  • A loaf tin
  • Baking paper

Ingredients

  • 600ml whipping cream, cold
  • 200g Carnation Condensed Milk
  • A few drops of peppermint extract (to taste)
  • 25g dark chocolate, finely grated
  • 12 After Eight® mints, chilled, then chopped into chunks

Method

  1. Pour the cold cream into a large mixing bowl and whisk until stiff peaks form.
  2. Add the condensed milk to a separate mixing bowl. Gently fold in one third of the whipped cream to combine. Add the rest of the cream and fold again gently until it's evenly mixed.
  3. Mix in a ½ teaspoon of peppermint extract, then taste. If you think it needs more, add another ¼ or ½ teaspoon. When you’re happy with the level of mint flavour, add a few drops of green food colouring and fold gently to combine.
  4. Stir in the grated chocolate and chopped After Eight®. The folding will cause the cream to deflate slightly, but don’t worry. There will still be enough air in the mixture to create a smooth ice cream.  
  5. Tip the mixture into a baking paper-lined loaf tin and use a spatula to smooth the top. Cover with a sheet of baking paper and lightly press it down into the mixture so that there is no air between the two. Pop the tin into the freezer overnight to set.  
  6. To serve, simply remove the tin from the freezer and let it stand at room temperature for 10 minutes. Scoop balls of ice cream and serve in bowls or cones. 
     

Top Tip

The secret to great no-churn ice cream lies in the assembly. Fold the ingredients together gently to retain as much air in the whipped cream as possible. Adding the cream in stages helps achieve a good consistency. Chilling your After Eight® before chopping – even if it’s just 20 minutes in the freezer – gives the peppermint fondant a little more structure when folding the ingredients together and makes the whole process of chopping them up much less messy.
